Pan-fried foie gras with strawberries

Ingredients :
1 first grade foie gras, a
pinch of salt and white pepper
Briothe
500 grams of high-gluten flour,
10 grams of salt,
37 grams of sugar,
27 grams of yeast,
15 milliliters of milk,
7 eggs , whipped
300 grams of butter , and cut into small cubes
Duck fat , fried with a
pinch of salt
Strawberry jam
100 grams of Cabernet Sauvignon vinegar,
100 grams of sugar,
750 grams of strawberries, all 4
6 grams of salt,
1 thyme
Pickled green strawberries
Green strawberries , 1 basket,
300 ml water,
125 ml Chardonnay vinegar,
100 g sugar,
1 thyme,
5 g salt

1 handful of watercress (watercress)
Method practice:
- First make Briocchi: put flour, salt and sugar into a mixing bucket equipped with a dough mixing hook , then put in the milk and yeast mixture and eggs , mix together and stir to form a dough. Gradually add the butter piece by piece , continue mixing until the dough looks smooth and shiny, transfer to a clean bowl , cover with plastic wrap , and put the dough in the refrigerator overnight.
- The next day, reverse the dough to remove excess air, stretch the dough slightly and fold it into three or four into a loaf shape. Knead the folded dough into a large loaf, put it in a small toast box, cover it with a damp cloth , and allow it to rise again in a warm place for an hour.
- Preheat the oven to 190°C . Put the proofed Bricio in the oven and bake for 30 minutes , then carefully take it out and cool on a wire rack.
